{acorn}

You should try this recipe. It's good. I made some homemade whole-grain corn bread and added some olives to the finished stuffing. D and I had to split one half because they were so filling. That means lunch or dinner another day is covered from half number 2. Sweet.

7 love notes:

oh! i have four acorn squash just waiting for something to be done with them. i sit and stare at them in wonderment. no more~but i might try the 101 cookbook because after all, i'm not vegan or vegetarian. sigh.

Some yummy chicken sausage or turkey would taste amazing in this :) Or you could make some soup. I love squash soup.

every time i make soup with squash jake and i both feel like we're eating baby food. it's just too tough to swallow after years of watching ill-mannered babies spit theirs out all over.

Bummer. Though I can totally see your point. I have a hard time with a lot of soups, but I think I've finally found some I like. At least squash is super yummy lots of other ways.

these are cooking in the oven now! i used apple maple turkey sausage and then followed the same recipe you recommended but doubled it. the stuffing is SOOO yummy! i'm excited to try it.
